They are very strong producers, so I have been eating/drinking a lot of kefir lately. Yum... I have made a great drink that I actually eat with a spoon. First I use only organic milk and I find that a 1% milk fat gives a nice thick kefir. It does work with non fat too, but just my tastes here. Here's my breakfast these days: Kefir, organic unsweetened applesauce (Trader Joes, Calif.), spiralina powder, lecithin, cinnamon, stevia to taste, and sometimes I add those great organic frozen raspberries/blueberries from Trader Joes. Of course, you need to make the amounts according to your tastes. I haven't made this with Guar, but it would make it even thicker and I'm sure would be a very good addition.
