Suz! What are you doing to me?! Key Lime Pie is one of my specialties...you're killing me here! But just to show you how much I respect you...and Francesca....and Micky....and Bob....and ROY....I will try your brand of KeeeeRON pie and let you know how it works out.

Actually I am very excited about trying this because while Key Lime Pie is indeed one of my specialties, I make a dozen a year, I cannot eat them because I am allergic to milk proteins. Yogurt, for some reason is tolerable, so this might actually allow me to have a slice of paradise! Thanks for the tip. Always, Dave

Key Lime "Pie" Pudding

1. Halve and quarter 4 limes. Cut away the rinds with a sharp knife and pop the lime meats into the blender. Be sure to squeeze the last few drops of juice out of the rinds, too. The real lime pulp in this recipe totally ROCKS--please try it this way instead of using bottled juice (for meeeee, ok?)

2. Put one cup of nonfat, plain yogurt in the blender.

3. Add water to the blender up to the 4 cup line, and blend this mixture.

4. Sweeten the mixture to taste with sucralose or Splenda, and add an optional splash of vanilla.

5. Add 2 tablespoons of guar gum, give it a whir, and immediately pour into individual serving bowls before the guar sets up.

6. Chill.
