Reasons: (not necessarily listed in order of importance) First of all egg yolks to me taste much better than whites. Second: the yolk is very nutritious. And third " the man " agrees that the whole egg can be consumed without any bad effects from cholesterol etc (btw if my bad cholesterol were any lower I'd probably be one of Gifford's statistics) . I too eat the whole egg a couple of times per week, however I find that the nutrient dense yolk is expensive in terms of saturated fat and cholesterol (OK maybe the cholesterol doesn't matter), but still I need more protein than I can secure at my desired fat levels from whole eggs. I do agree that they taste a lot better ~ no doubt!...and for Easter, it is really hard to get those yolks out before you color those buggers! A slice of nonfat cheese substitutes nicely for the yolks I've removed, and gives me a little more calcium for the day too (which I need.) Love ya Suz PS Dave congrats on the weight loss. A rapid weight loss the first few months is kinda normal, and yes that accounts for a few wimpy workouts until your body adapts to the new system. Don't fret.
