Hi Janet,

I try to eat kale everyday. There are three things "to do" with it that seem to work best for me, and which the family will also eat.

The easiest thing is to throw some into my homemade vegetable soup. I freeze my soup in individual microwaveable bowls, so it's always ready.

Second easiest is what I call "stir steaming." Instead of "stir frying," I place some chopped vegetables such as kale into a non-stick pan with a tablespoon of water. I heat up the pan as if I were going to stir-fry, but then turn the heat down to low and cover the pan, letting the vegetables steam. Kale works nicely this way, especially with a little onion and garlic. Seasoned with a dash of vinegar and just a smidgeon of sucralose, this is very nice.

The third way is to "stir steam" some chopped kale and onion (and sometimes some red bell pepper), then add egg whites (with one yolk) to make a Denver omelette. The family actually likes this, and I feel supremely virtuous all day for having eaten KALE for breakfast!
