Splenda is made to measure like sugar, whereas sucralose is the pure "industrial-strength" stuff. Splenda may be somewhat more convenient, but they taste the same. Pure sucralose is so strong that you need to dilute it in water and use an eye dropper, or measure out in such a tiny amount of powder that it can be hard to control the amount you're using.
