I used Dannon plain yogurt as my starter the first few times but now you can get goat yogurt at a lot of stores so it can be used as a starter. I used to make a lot and strain it to a cream cheese consistency and make my grandson custard cup SCD cheesecakes he loved. The cheese is like cream cheese but far richer and healthier and casein is removed. I also made homemade jello's with fruit juices and Knox gelatin adding a little of the potent yogurt to the cooled mixture before refridgerating.
