But the lactoglobulins and other milk proteins are different. And I do not know how much change there may be when it is cultured/fermented in this way. Casein has a very highly conserved structure across species,unlike the other milk proteins, although I did hear recently that human milk casein does not produce the opioid peptides. I still remember my eight year old son lying in the hall groaning with joint pain after we tried to give him goat milk instead of cow's milk. Peace, Kathy E.
