We don't use diary and I was wondering what you put in the milk to make it kefir ( " zakvaska " )? > > Thank you for reply, Dilya I use regular milk kefir grains. You can " train " them to work in non- dairy milk: http://users.sa.chariot.net.au/~dna/kefirpage.html#alternativekefir Or you can alternatively use water kefir grains. Information about them you will find at the same page. Keep in mind that commercial " kefir starter " is not the same as " real kefir grains " : http://users.sa.chariot.net.au/~dna/kefirpage.html#kefirnovice When looking for real kefir grains look into this database: http://www.torontoadvisors.com/Kefir/kefir-list.php As for non-dairy milk you can use seed, nut or soy milk. I use store bought hazelnut milk Ecomil. If you cannot find suitable store bought non-dairy milk you could find some recepies for home-made milk here: http://users.chariot.net.au/~dna/vegmilk.html Certainly, non-dairy kefir tastes different from dairy kefir but it is not bad at all. Especially if you are used to fermented products. And it is the most effective and cheap remedy against yeasts and bacteria. Hth, Galina PS You may e-mail me privately if you want more information about my experience with kefir and other fermented products.
