I use regular milk kefir grains. You can " train " them to work in non-

dairy milk:

http://users.sa.chariot.net.au/~dna/kefirpage.html#alternativekefir

Or you can alternatively use water kefir grains. Information about

them you will find at the same page.

Keep in mind that commercial " kefir starter " is not the same as " real

kefir grains " :

When looking for real kefir grains look into this database:

As for non-dairy milk you can use seed, nut or soy milk. I use store

bought hazelnut milk Ecomil. If you cannot find suitable store bought

non-dairy milk you could find some recepies for home-made milk here:

http://users.chariot.net.au/~dna/vegmilk.html

Certainly, non-dairy kefir tastes different from dairy kefir but it

is not bad at all. Especially if you are used to fermented

products. :) And it is the most effective and cheap remedy against

yeasts and bacteria.

Hth,

Galina

PS You may e-mail me privately if you want more information about my

experience with kefir and other fermented products.
