(My heart goes out to the child who loves one of those fast food favorites as KFC Chicken strips) I tried to recreate one of those treats so our 10 yr. old gets the experience without the gluten/dairy! 3 free range or organic chicken breast (no bones) 2 beaten eggs or for dairy free version (1 cup unsweetend rice milk with 3 tsp. of honey) This is for dipping the strips before rolling into the breading. 1/2 cup rice flour 1/2 cup potato starch 1/2 cup unsweetend coconut flakes 2 tsp. onion powder 2 tsp. garlic powder 1 tsp. paprika 1/2 cup parmesan cheese or omit for dairy free version 1/2 tsp. sea salt (Celtic Sea Salt has 80+ minerals) 2 cups of healthy frying oil in fryer or cast iron pan (We use unrefined coconut oil at med. heat) Directions Slice chicken breast into 1/4 - 1/2 inch strips Beat eggs or dairy free mixture for dipping strips before putting on dry mix Mix all dry ingredients and put into brown bag or 1 gal zip lock bag Dip the chicken strips into the wet mixture then drop one strip at a time into dry mix in bag and shake then add to hot med. heat oil. ( fry 2 min. on each side )tip...don't put too many strips in hot oil as this will cool the oil and dry mix won't stick dipping sauce 1/2 cup raw honey 1/2 cup yellow mustard 2 Tbls. mayo (Can omit for egg free version) This recipe feeds a family of 4-5.ENJOY!
