It helps to explain it to them even though in a milk meltdown they probably won't get it while they are in the midst of it. I have one who really needs to be off milk but sometimes will get it at school against my wishes. To this day I say " I'm pointing out that you had ice cream 20 minutes ago and now your behavior is really bad -- notice how your body feels right now. " She is learning. Sometimes there are no good substitutes and you just have to find new things, unfortunately. More potent enzymes might be another solution.
