Peel your potatoes, and discard any that are green or have black streaks in

them.

There is a high amount of a poison called solanine in the skin of potatoes, the

eyes, and in the sprouts from the eyes. The amount is elevated if the potato has

turned green, or has black streaks in it. This poison interferes with

methylation and is harmful to the digestive tract.

In 1976 the Department of Health, concerned about high levels of anencephaly

and spina bifida, urged pregnant mothers to wear rubber gloves when preparing

potatoes and to discard in their entirety any potatoes that showed signs of

greening or of blight (black streaks in the potato)
