Squash buttons, banana buttons, and chicken cupcakes are all finger foods without honey. They are egg-heavy, though. We also make the 'bread' from Mercola's recipe, and I think there are other 'souffle breads'out there, and then you can make whatever sandwich you like. I bet it will be much easier when you add back in the dairy...
