, My kefir list says that it is as alcoholic as juice, IF prepared properly. Dom, who is the world's most expert person on kefir, has a recipe that he claims makes water kefir with as much sugar content as a lemon (dramatically lowers the sugar used when making it). I can get you recipe if you would like. I have never had a problem with alcohol and I don't drink and am very sensitive to alcohol. To minimize alcohol content, you have to brew it without the lid, so IOW, not airtight from what I recall. I do use a lid and still, not alcoholic for us.

You know what, we're not worried about the sugar content, she handles what sugar she gets just fine without yeast. She never did have a problem with sugar, it was carbohydrates that created the most yeast and that seems largely under control now. The kefir is preventative, we think she should be on either yogurt or kefir just for general health reasons.
