Most cultures are probably not as obsessed with peeling root vegetables as we are...a good scrubbing should be sufficient. That's what I do with my carrots. Are you aware though, that sometimes a white film/foam appears on the top of beet kvass? This is from a mold that grows on beets. I have actually seen it on the outside of organic beets growing in the field. Sally says it is harmless and that you can just scrape it off the top of your kvass.
