I know it’s fermented but I don’t think there’s a way to really know if it’s broken down to monosaccharides. Too bad because I was thinking of making EM in order to load up on probiotics in an inexpensive way. I don’t know of any other inexpensive GAPS-legal probiotic drink other than lacto-fermented sodas made with honey, which I’m going to start making this weekend. I've only ever used whey, which is out right now... Thanks, << If you make ginger soda the ginger already contains good bacteria. When I made soda in the past I’d inoculate each new batch with some left over from the old. But I think kraut juice is a good way to inoculate the first batch. I don’t think I’ve every used whey to make soda. I think posted the recipe she uses (from NT). We have a guy here who makes fantastic lacto-fermented sodas. He sold them at the last two WAPF conferences. His method is more complicated than the NT recipe and he uses sugar not honey, but I might try his method again at some point. If it’s a success, I’ll post it. I think he’s modified it somewhat since the time he passed out his instructions to our local WAPF chapter.
