I am such a grain addict, it is hard to accept the fact that I can live without them. So, I need to find some substitutions, at least temporarily. I am experimenting with various flours to see how they perform. I just made the tastiest creation yet. I don't have exact measurements because I was just throwing it together. I know some of these ingredients are off limits for many of you, but right now we are easing into this. Here's what I did: Mixed together some almond flour, coconut flour, and carrot/apple pulp (from juicing). Mixed in baking soda and salt. In another bowl, mixed together 3 eggs, melted ghee/coconut oil combo, honey and yogurt. Mix together wet and dry ingredients. I spooned muffin mixture into oiled mini-muffin tin. I placed 3 blueberries on each mini-muffin (kinda pressing down a bit). Baked in 325 - 350 oven for about 12 minutes and yummy! Just thought I would share excitement.
