Guest guest Posted January 3, 2008 Report Share Posted January 3, 2008 , We use muffins, muffins, muffins. I cut them in half (so there's a top and bottom), and make sandwiches. They freeze well so you can make a big batch and take out just a few at a time. The Grain Free Gourmet has lots of good recipes, as well as the BTVC and GAPS book. I also make nutbutters and store them in the freezer (they go rancid quickly), and put them on celery or muffins. I make the souffle bread--I use Mercola's recipe and put in nuts instead of flax seeds. We also use a thermos for hot things--today my daughter took meatballs in beef broth. There are also chicken 'muffin'recipes on Pecanbread, which they are not crazy about, but will eat. We round out the choices with fruit and veggies. For a treat, they love nutty caramels. Lunches are definitely harder than breaks where they are home. Pecanbread has lots of recipes and lunch box ideas. Guest guest Posted January 3, 2008 Report Share Posted January 3, 2008 , I think it might be necessary to invest in some good stainless steel insulated canisters to pack stews and soups. I have some in several sizes, most made by Thermos, that I am very pleased with and use most every day. Then I send salad with some good homemade dressing and/or fruit to go with the main course.
