Guest guest Posted February 25, 2008 Report Share Posted February 25, 2008 What is everyone's opinion on this natural sweetner? It is mostly fructose, which is a mono-sugar molecule. But I am not sure if it is totally off limits. I currently use it to sweeten my coconut kefir. My 5 y/o loves it! I am afraid he won't like it without the agave. I am planning to try to find some fresh coconuts, but I currently just use Zico coconut juice/water. I use body ecology kefir packet, and let it ferment for 2-5 days. I add about 1 TB agave on day 2 and it starts to fizz. Then, when I think it has fermented enough, usually about 3 days, I put in glass container, add some fresh squeezed lemon juice, stevia drops, and just a small amount of agave nectar. My son calls this drink fizzy lemonade. He doesn't even notice the fermented drink at all and he loves it. It has made a world of difference with his behavior, skin conditions, and his regular and normal bowel movements. Anyway, what do you all think about agave nectar? Thanks. Honey is a pretty good substitute, although it needs to be warmed slightly in order to really be stirred in well to the beverages. It has to be added after the beverage has been fermented, however, otherwise it will interfere with the whole process. I have a jar of honey & water that I keep in the cupboard (or in the fridge during warm weather). I use about equal parts, but the exact proportions are not important. Just add some water and some honey and shake.
