Hi Kim

I toss out the bananas and strain the kefir at this time. I haven't

tried it any other way so I can't say. The kefir needs sugar to feed

on to survive so I suppose if you wanted to keep going without

straining it, you would have to add more bananas and sugar. I'd look

it up online. I know some ebay listings have jars with spouts on the

bottom so you keep it fermenting without straining it so somebody out

there must be doing it this way.

Apples, finely sliced to maximally expose them to the ferment; pieces of

pineapple; figs, dates and other dried fruits (or fresh figs, of course);

grapes, pierced or sliced (in whole form, they won't ferment); cashew nuts

donate their sweetness to the kefir (loosing it themselves). Grape or orange

juice should be fine, with no additional sweetening needed. Strawberries are

also nice, i believe. Melon (maybe because it was store-bought and not a freshly

picked, fully ripe one) was not a success for me. The best advice, in my

opinion, is to experiment and trust your nose - and of course share the most

amazing (or disappointing) results. Keep a backup of grains in a known good

ferment and/or in sugar water in the fridge, or in dried or frozen form.

Hi Kathy,

My grains are doubling every 2 days. I'm using well water. With my previous

batch of grains, I used filtered water and the grains hardly grew at all. It

may have been that the grains were not good, but I think the water does have

something to do with it.

Try using half an egg shell in your water along with the grains. My friend was

using RO water and the grains hardly grew until she started putting an egg shell

in the water. Then they started growing very quickly.

I suppose the grains might also grow very slowly if you were not adding enough

sugar. I use about 1/3 cup of organic cane sugar per 1 quart of well water. I

add my lemons and figs at the same time because I think that they must add some

nutrients to the water that feed the grains. This is just based on my own

thoughts, not any info I've read.

Thanks so much, i just tried this yesterday...using bottled water and I think

that the egg shell already has them multiplying just overnight. :) Yippee!

Happy grains means healthy kefir.
