I also did it for IBS, and I also would get a stuffy nose almost immediately upon eating certain foods. I believe it was a reflux reaction. My opinion is that the acid causes a swelling in the nasal passages. Mine has gotten much better with the intro diet, I can taste foods better and the chronic nasal/allergy problems are gone. Have you started on any probiotics? I believe the supplements start on stage 3. Can you add any of the things on stage 3 without the stuffy nose? It may just take longer to be able to digest certain foods. My opinion is to not add the foods if your body is reacting to them, but add what you can without reaction. If you add them and then react to them, the next stage comes how will you know if you are reacting to the new food if you are stuffy from the last food you added. We took over two months to get to stage 6, not sure how long other people take, but I didn't want to repeat the process. I needed to get the most out of it for my son. Just my opinion. Have you tried preparing your own nuts and nut butters? There is quite a difference between commercial nuts and nut butters and homemade. Nuts and seeds contain enzyme inhibitors which make digestion difficult. Soaking raw (not pasteurized) nuts in warm water and sea salt activates enzymes which neutralize the enzyme inhibitors to make the nuts more digestible. Commercially prepared nuts and nut butters are not soaked but usually roasted which doesn't inactivate the enzyme inhibitors and makes them hard to digest.Try almonds first. For one cup of almonds, add warm filtered water to several inches above the level of the almonds in a bowl. Mix in 1 teaspoon of sea salt, not iodized table salt (I like the Redmond's brand). Soak for 7 hours or overnight. Drain. Pour boiling water over the almonds and drain. The skins will slide right off the almonds in your hands (removing the skins makes them even more digestible). At this point you can put them in a blender and add filtered water to make almond milk, or you can dry them in a dehydrator or your oven if it has a warm setting (no more than 150 degrees). If you decide to dry them it'll take about 24 hours but they will be crispy and yummy. If you decide to make almond milk, I recommend sweetening it with a bit of honey or date. Milk will keep in the refrigerator for 4-5 days. It will separate so you'll need to stir it before drinking. If you can tolerate the milk or the crispy nuts, then you can also make nut flour and butter from the almonds.I had to prepare all my son's nuts with soaking and drying because he couldn't tolerate the commercially prepared ones. After about 3-4 months, his digestion had improved so that I can now use commercially prepared nut flours for him.Seeds are more digestible if sprouted. I'm not sure if you have a natural food store or Whole Foods near you but there is a company called Go Raw that sells sprouted seeds. I would try those to see if you can tolerate them. Maybe you can get them on the web if there's not a store near you that sells them.I also recommend Sally Fallon's Nourishing Traditions cookbook for information about how to prepare nuts and seeds so that they are digestible.How about coconut flour? I like Tropical Traditions organic coconut flour; it's the best tasting one I've tried. I also a pretty bad autoimmune disorder as well as IBS, and I am trying to heal that as well. I am taking 6 biokults a day, I worked my way up to them.. It gives me a lot of hope knowing this does not happen to you! The other issue I have is the bone broth makes me nauseous. I put a little rosemary in it, so maybe it is die off..
