I have also used sunflower seed butter to make muffins which would work well in the your son's nut free classroom. Like I said, there are some good recipes for coconut flour, but I also like your idea of sunflower seed butter. I'll have to see if I can find it, or make my own. I guess I could also use tahini (sesame seed butter) as well, and I know where to get that. If that doesn’t work, you need to use large lettuce leaves for sandwiches. Also, lots of soups and stews. If he's in a nut-free room, I'm thinking (as GAPS-friendly as coconut is) that it wouldn't be welcome in a nut-free room. Yes?
