I have been lurking for a while, absorbing all of the wonderful

discussion, but I thought I'd add my two cents about the kombucha

question. I get sort of woozy when I drink kombucha, but once I

started fermenting it until it was basically vinegar I had no

problems. I drink it mixed with water, as you would lemon juice or

cider vinegar, though I make it pretty strong (I do like sour tastes a

lot). I may not be getting as much volume of the kombucha, but I am

getting the probiotic effect that I would not be with lemon juice. I

live in Miami and usually carry a water bottle filled with my

" vinegar " water to stay hydrated (unfortunately, it has been in the

80's most of this " winter " !) I suppose for kids you could add a bit

of honey and it would be like lemonade (actually, like a vinegar

shrub, a very traditional drink).

And it travels well--I fill 2 oz bottles with the vinegar, which

passes the TSA regulations, then add some to my water bottle once I

pass security. This really helps my gut stay healthy when I travel,

as I generally have a challenge staying regular on trips away from home.

Plus, if you get in the habit of making your kombucha into vinegar,

with a couple of batches going, you don;t have to fuss too much about

catching it at the right moment in its fermentation . . . it's the

lazy-woman's kombucha!
