The longer you leave it, the more sour, and probably the less your kids will like it. But if you leave it just a bit, you will get the benefit of some probiotics. sue wrote: I haven't tried this, but am thinking of pureeing kraut and adding to juice, or trying to mix beet kvass with juice and see if that is palatable to the kids.
