jerky and smoked salmon

I think smoked salmon is legal as long as it is not sugar cured, which

most commercial brands are. I haven't looked extensively, but sugar is

a common ingredient.

I just got a dehydrator and order 2 food dehydrating books. I'll let

you know if any jerkys come out well. There are also recipes on

pecanbread that use orange juice and I forget what else. I think you

want an acid to help tenderize the meat, as well as salt. I'll let you

know when I know more. I am trying to gear up for our car trip to

florida over spring break, and thought jerky, dried fruit and the like

might be a good way to go.

I just bought a dehydrator so I can learn to make beef jerky. I am

going to freeze it and then keep it in the fridge so he can snack on it

at any time. I also spent $600 recently at the grocery store,

practically buying them out of bacon, canned sardines, tuna, herring,

packages of smoked salmon, etc.

I have 2 books on order, so I don't have any recipes, yet. If anything

comes out well, I'll let you all know.

I have just been using my dehydrator for crispy nuts and herbs so far.

I dried a bunch of dandelion which I plan to use for tea.
