I haven't looked extensively, but sugar is a common ingredient. I just got a dehydrator and order 2 food dehydrating books. I'll let you know if any jerkys come out well. There are also recipes on pecanbread that use orange juice and I forget what else. I think you want an acid to help tenderize the meat, as well as salt. I'll let you know when I know more. I am trying to gear up for our car trip to florida over spring break, and thought jerky, dried fruit and the like might be a good way to go.
