Can anyone out there give me a simple method for roasting duck. I am especially looking forward to using the saved fat for baking vegetables. Guest guest Posted January 14, 2008 Report Share Posted January 14, 2008 . I have made this several times with good success. Remember 1 duck will only feed 2-3 people (unlike chicken). Don't forget to make stock from the carcass--it's delicious, and a nice change from chicken stock! Preheat oven to 350. prick the skin all over with a sharp blade, being careful not to poke the meat. This allows the fat to drain. Season the duck with salt and pepper. Place it on a rack in a roasting pan, put a shallow covering of water in the pan, add any veggies you wish to roast with it. Put it in the oven breast side down, roast about 30 min, then flip breast side up. Baste with pan juices. Roast another 45 min, basting a few times. The bird is done when the juices run clear and the leg wiggles a little in the socket. A thermometer should read 180 degrees in the thigh. Be careful not to overcook or it will be dry. If your skin isn't crispy enough, you can cook the last 10 min at 400 degrees.
