Kombucha question

Thanks for confirming that the kombucha is OK. I've

never had it myself, but I thought it sounded just

fine. I will forward your responses to my friend, and

I have recommended that she join thus group so that

she can get her fermenting questions answered

directly.

I believe kombucha has helped to regulate my hormone levels and has

allowed me to be medication free this past year. (I was taking

hormones and 2 meds for blood pressure). It helps detox the liver and

removes estrogen like substances. My eye doctor noticed a good

improvement in my vision, as well. I wouldn't be without my daily

dose. There area few devoted to kombucha.

BTW, Nothing at all wrong with apple cider vinegar taste or fizziness

in kombucha, all signs of a robust brew. You can dilute with water if

it's strong to your taste, or just let it sit for a week or so, or let

it sit out for a week or so and it will grow a new scoby to brew your

own. I prefer mine on the sweet side.

I personally would consume it, unless it was too sour for my taste (not likely

for me, I like it sour).

---> I would think it's fine as well. It sounds like it's doing what kombucha

does. If it's too sour, mix it with something else to dilute it: regular tea,

apple juice, water, etc. I usually drink mine cut with regular tea. CT

I've enjoyed the taste of kombucha but never noticed any particular health

benefits nor any of the dreaded " detox " symptoms either.

---> I haven't had any detox either, but I know a several people who have.

Each of them have mercury fillings. Maybe that's an issue...ct

Perhaps, but my mouth is full of mercury fillings that I've had for probably 30

years or so.

Interestingly enough, 2 recent studies showed no difference in IQ, memory,

coordination, concentration, or kidney function in children with mecury amalgam

fillings vs resin fillings. Who knows what they're going to find has leached out

of those resin fillings in years to come...

That's good to know (about you having fillings). Then it's probably something

else that cause these other people to have the detox symptoms. My husband got

bad headachs when he used kombucha. So, he won't drink it any more. CT

Do you yourself have a simple to follow method for making Kombucha from

scratch? Say I get a tea and a starter, then what?

Make 3/4 gallon of sweet tea (4 regular sized tea bags steeped in almost

boiling water....then add 1 cup sugar). Add kombucha tea and mushroom after the

sweet tea cools. Cover with a cloth to keep the bugs out and leave in the pantry

(or other cool, dry place) for about a week (longer for more sour, less for more

sweet). Filter and drink.CT

In my recent phone consult with Dr. Natasha, she said that kombucha was okay, as long as it was "properly fermented" and didn't taste "at all sweet." I have made kombucha on and off for years, but find that I get a very erratic result, depending on time of year, temperature inside the house, etc. Does anyone have a foolproof (and easy) way to know whether one's kombucha is, indeed, "properly fermented"? I would love to go back to drinking it!

I'd like to know this too. My last batch was a little too sweet. The

one before that was like vinegar -- I guess I overcompensated this time.
