Not > sure if it's worth it. I'm supposed to avoid caffeine... I believe kombucha has helped to regulate my hormone levels and has allowed me to be medication free this past year. (I was taking hormones and 2 meds for blood pressure). It helps detox the liver and removes estrogen like substances. My eye doctor noticed a good improvement in my vision, as well. I wouldn't be without my daily dose. There area few devoted to kombucha. BTW, Nothing at all wrong with apple cider vinegar taste or fizziness in kombucha, all signs of a robust brew. You can dilute with water if it's strong to your taste, or just let it sit for a week or so, or let it sit out for a week or so and it will grow a new scoby to brew your own. It sounds like it's doing what kombucha does. If it's too sour, mix it with something else to dilute it: regular tea, apple juice, water, etc. I usually drink mine cut with regular tea. Interestingly enough, 2 recent studies showed no difference in IQ, memory, coordination, concentration, or kidney function in children with mecury amalgam fillings vs resin fillings. Then it's probably something else that cause these other people to have the detox symptoms. My husband got bad headachs when he used kombucha. So, he won't drink it any more. Make 3/4 gallon of sweet tea (4 regular sized tea bags steeped in almost boiling water....then add 1 cup sugar). Add kombucha tea and mushroom after the sweet tea cools. Cover with a cloth to keep the bugs out and leave in the pantry (or other cool, dry place) for about a week (longer for more sour, less for more sweet). I have made kombucha on and off for years, but find that I get a very erratic result, depending on time of year, temperature inside the house, etc. Does anyone have a foolproof (and easy) way to know whether one's kombucha is, indeed, "properly fermented"?
