Mercola's grain-free bread

I was tired last night so I just didn't feel like getting it then.

Here it is:

1 c ground nuts (I use walnuts or walnut/almond combo. Mercola uses

1/2 flax seeds, but they are not SCD legal)

1 tsp sea salt

5 eggs, separated

3/4 c zucc, grated (I use more...)

2 tbsp oil of your choice--I use coconut

1. line a 9x13 pan with parchment paper and grease the paper

2. blend egg yolks, zucc, and oil. mix in nuts, and salt

3. beat egg whites to soft peaks (you can use a pinch of salt to help

with this). They should be stiff, but not dry

4. fold egg whites into other ingredients. they should be well mixed,

but areas of egg white will still be present--don't over mix

5. bake in a pre-heated 350 degree oven for 15 min.

6. cool for a few minutes, then turn out of pan. if you leave them in

the pan it will get soggy. cut into pieces (cut as you would

brownies). I freeze them flat and then just take out 2 each morning

for her school sandwich. Cool completely before you freeze or they

will get soggy.

This doesn't taste like good ol wheat bread, but with PBand honey, one

kid is happy with it.

Dr. Mercola has a grain-free bread recipe that one of my kids likes,

and it makes sandwiches. My other kid won't touch it. It is eggs,

nuts, zucc, oil. I'll look up the recipe for you if you are interested.
