I have been growing the plant for years and have been using it as well.. I'm diabetic type 2 and have found it one of the best sweetener i have been using. This is from my point of view and have never had my blood sugar go up..the whole plant from leaf to stem is very sweet and i use the whole thing..but not the roots. I dry it grind it and sift out the stem and them boil the stem and use the water in my coffee or tea after i first shift out the stems. The powder is green in color and is great in tea and coffee as well..but if you do mind it floating it is a great sweetener. I have not tried it in backing as of yet.
