Guest guest Posted November 2, 2004 Report Share Posted November 2, 2004 Greetings all - It seems like a long while since I've written to this wonderful list (so busy here!!) but today I would like to share the following recipe which I'd concocted for the noon day salad. It has an Asian flare, I think, and is very nutritious - as tastebuds vary, I cannot claim others will find it delicious but we liked it. On a bed of baby greens, artfully arrange *well-drained* soba buckwheat noodles, hijiki seaweed (soaked), and a heap of freshly grated carrot. Top with the following dressing (adjust amounts of the ingredients to suit your taste): fresh squeezed lemon juice, Udo's oil, low-salt miso, raw black sesame tahini, just a pinch of Total Nutrition or Super Nutrition. The dressing will be strongly flavored, so you may wish to use sparingly. (For the two of us, I used a half of large lemon, about three tablespoons Udo, just less than a teaspoon of miso, and about two teaspoons of the tahini - again, just a pinch of TN.)
