Which setting (Variable number? or High?) do you use? Guest guest Posted July 31, 2010 Report Share Posted July 31, 2010 In my experience, cooking veggies like onions and broccoli and carrots (I think Leeks would fall in this category) brings out a different (sweeter) flavor and "cooking" them in the Vitamix doesn't do the same thing. I don't think they really get "cooked" in the VM - just heated up. Which from a nurtritional standpoint might leave some enzymes "active" - or at the least might not have as adverse an effect on some vitamins??? BTW and FYI...
