Guest guest Posted January 4, 2005 Report Share Posted January 4, 2005 Well, I made mine last night They aren't bad, but I have learned from making these ones so next time they'll be better I'm sure :-) I found that they take longer than 2 hours to be as crisp as I liked them (about 4 hours). I didn't blanch them, and they stayed white. I dehydrated them at 105. I soaked them in oil, salt, and ACV before dehydrating. Next time, I would use a lot more seasoning, as they didn't have much flavor other than raw potato. Of course, I also added some ACV which may have kept them from turning black. ===========================Has to be the oil. Try it without the oil. The acid will kill off any fungus or molds, that is for sure. Potatoes tend to turn black anyway or dark brown. Just the oxidation of the starch. I guess the acidity counteracts that somewhat. Lemon would be great for this. Yummy. I usually soak the potatoes in a salt and herbal mix (whatever I have on hand) first to give them flavour. You have to slice them almost paper thin, though or they are almost to hearty to eat. They do tend to turn brown or black, but that doesn't affect the taste at all. Experiment, have fun!!
