Guest guest Posted November 19, 2004 Report Share Posted November 19, 2004 These are all great sites with great information...the only thing you have to be very careful of...is that when your dealing with temperatures that high...if you want something that is soft crack...and then you do the water test with it...you have to be quick in making the determination of what you want because you can easily go into hard crack stage while your testing your mix...which is why a thermometer is your best bet. In the past I have made a lot of hard candies and cannot tell you how many batches I have burnt! I used to make lollipops and sell them...it was a tricky thing but at the time was very rewarding and fun! Just is very testy at times...you have to be on top of your pot and watching that thermometer like a hawk. I just highly recommend is you want to do something like this it is truly best to have some sort of thermometer...it truly is your best gauge for what level of the mix is best.
