Don's Raw Holiday potatoes and salad

1 handful of arugula

1 handful of dandelion greens

1 handful of radicchio leaves

1 handful spinach leaves

1 handful of Lamb's lettuce

1 handful of endive

any other greens you care to.

Mix all together in a bowl after washing thoroughly.

In food processer, process 1 large head of cauliflower, 1 small onion, 1

clove of garlic (more depending on your tastes), 2 cups of soaked

cashews, himalayan salt or celtic grey sea salt and pepper to taste, 1

tablespoon extra virgin olive oil, 1/4 cups fresh squeezed lemon juice,

and process until smooth. You may have to add in enough distilled water

to get the consistency you desire. Add in greens above by the handful

until you have processed about three or four handfuls. Eat. It is yumm,

very colorful and all raw.

The rest of the greens above make a wonderful salad by adding in soaked

buckwheat, sliced onions and garlic (very thinly sliced), jeruselum

artichokes, tomatoes, cucumbers, zuchinni, olive oil and lemon juice,

salt and pepper to taste. Yummy and full of nutrients.

This all sounds very yummy. Neither my son nor I are overly fond of

cauliflower and I wondered how much these resemble the flavor of

cauliflower. I know that on low carb diets it is recommended to use

cauliflower as a replacement for mashed potatoes, cooked of course, and

this always struck me as an issue. Being raw would strike me as

having even more of the flavor. Do the other seasonings cover up

the cauliflower flavor enough? To me, this is a very strong

flavored vegetable...but I'm very sensitive to tastes (although Suzi and

might argue since I was the only one who liked the System Cleanse

Tea...lol)...and smells...and am currently doing a water fast...on day 3

working on 5 days...maybe longer depending on how I feel...but this has

enhanced my sense of smell incredibly over the last few days...so I am

only imagining what it will do to my sense of taste! lol

Hmmmm... interesting. I never considered cauliflower as having much

flavor at all. I guess I won't be of much use to you in answering this

one. I love cauliflower raw and I really like the 'mashed potatoes' I

concocted. I do know that most of the greens in it are pretty strong

flavored themselves. I don't know Caroline, you may or may not like

them. I guess you could sub jeruselum artichokes or jicama instead of

the cauliflower. Should make for interesting potatoes.

Jicama would be a good sub... I love cauliflower but also like jicama which is used for slaws, french fries, etc.c.
