Definitely keep it moist, that's for sure. Interesting concept. I would think that the extra moisture would promote rotting, etc. Hmmmm..... Hi Don~ I guess I should have explained a little better... our root cellar is a two story structure tucked into the side of a hill. The lower level, where the springs will be routed will be more like a well house for keeping our goats milk (for soaps & lotions) & some of our soft cheeses.
