Dehydrator chips: Eggplant, Zucchini

I've never tried potatoes dehydrated because I heard that starch isn't

digestible unless it's cooked. I can highly recommend both eggplant

chips and zucchini chips. I like both of them completely plain -- no

added oil or anything. (But the eggplant can easily soak up a bunch

of oil and spices.) Slice the eggplant medium thin, and the zucchini

really thin, like with a mandolin. Yumm!

The blackness on things in a dehydrator I've also experienced with

drying tomatoes. I don't trust the ones in packages at the store, so

I'd prefer to make my own. But many of my tomatoes just turn black,

which I assume is a fungus. I throw them away now, but it seems a

shame. Maybe I should turn up the temp a bit to keep the fungus from

growing right at the start. I'm using very low temps right now,

probably too low for safety.

Hi Steve,

I don't know where you are located at but maybe try doing your tomatoes

in the sun. Fungus and molds do not like sunlight and they will be

really nice and full of sun energy.

I've had great luck with tomatoes... thin slices though at a temp of around 100 to 105 works good.
