Guest guest Posted January 5, 2005 Report Share Posted January 5, 2005 I've never tried potatoes dehydrated because I heard that starch isn't digestible unless it's cooked. I can highly recommend both eggplant chips and zucchini chips. I like both of them completely plain -- no added oil or anything. (But the eggplant can easily soak up a bunch of oil and spices.) Slice the eggplant medium thin, and the zucchini really thin, like with a mandolin. Yumm! The blackness on things in a dehydrator I've also experienced with drying tomatoes. I don't trust the ones in packages at the store, so I'd prefer to make my own. But many of my tomatoes just turn black, which I assume is a fungus. I throw them away now, but it seems a shame. Maybe I should turn up the temp a bit to keep the fungus from growing right at the start. I'm using very low temps right now, probably too low for safety.
