That's my favorite dressing -- I use it on everything, although the

amount of olive oil is about half. Instead of shaking the crap out of

it though, I let it marinate for at least an half hour - hour is

better to disperse the garlic flavor into the oil/lemon.

I used to use vinegar instead of the lemon, and the vinegar is a

little better, but I suppose I need the lemon more now, so it's still

ok. However, I've been trying to substitute some soaked flaxseed for

the olive oil, and that just doesn't do it. Yuck. I'll need to find

some source for olive oil I trust maybe.

Flax seed is quite interesting though. It absorbes water within

minutes and leaves a mucous/slimy consistency -- like raw egg whites.

It has no taste or flavor, except for the reminder to raw eggs which

is not pleasant. If I still fried things in fat, I'd be tempted to

use the soaked flaxseeds with some tumeric to make scrambled eggs.

Anyway, I found certified organic flaxseed and golden flaxseed. It

didn't say they were raw, but I'm assuming they were not roasted or

toasted.
