Guest guest Posted March 2, 2005 Report Share Posted March 2, 2005 for my pickled peppers,hot,sweet, or mixed; I use one third boiled water and the rest vinegar, and sometimes a bit of salt and sugar.....they keep for YEARS..I do not boil but heat the liquid and pour up warm so the lid will seal. ..but we usually use them within 2 years.home made is certainly cheaper than purchased!! I once used apple juice for a few quarts and we used those first..within 3 months....good. I also love pickled onion relish,then add corn when I open it....for corn relish.we like chow chow which is mostly cabbage, but it loses its taste after being open a few weeks.... I use a liittle onion and hot pepper and a little vinegar when I can and process greens such as collards and turnip greens.you may not think so, but that little bit of vinegar helps them " keep.
