Guest guest Posted March 3, 2005 Report Share Posted March 3, 2005 Spinach Salad 4 cups spinach 1/2 cup coarsely chopped parsley, preferably flat leaf Italian 1/2 cup coarsely chopped cilantro 1 avocado, peeled, pitted and coarsely diced 1/4 sweet red onion, sliced Mix all together and toss with the following dressing. This dressing recipe will make more than you need for this salad, so you can have some left over for tomorrow. 1/2 cup olive oil juice of 2 lemons 1 clove garlic 3 sprigs fresh parsley 1 tablespoon fresh thyme leaves large pinch cayenne pepper, optional Blend all together and use in salads or as a dip.
