Hi Rica,

I believe you are referring to the whites of the egg, yes? The protein

structure is changed by the lemon juice but I have been unable to find

whether this will inactivate the avidin so it is no longer able to bind

with the biotin in your body, or not. Eating the whites of eggs raw can

and will cause a biotin deficiency if you eat too many of them over a

period of time. There is not enough biotin in the egg yolks to bind with

the avidin (a glycoprotein) found in the whites, according to Dr. Mercola.
