Slice very thinly using a mandolin and then soak in water for 4 - 6 hours to remove the starch. Then soak for about an hour in lemon juice just to coat with a bit of celtic sea salt. Drain and spread single layer on dehydrator sheets. Dehydrate for 24 hours (approximate) or until crisp. I use my dehydrator at 108 degrees F. Do you mean that soaking them in lemon juice for an hour makes the salt adhere to them better after the soaking?
