Actually the first vegetarian book I ever had was called "The High Road To Health" by Wagner (yes, the Bionic Woman) and Arianne Spade. It is very good, very simple recipes and even has a chapter entitled "For My Meat Eating Friends". I found it to be very helpful and I still loan it out to aspiring vegetarians.
