Guest guest Posted March 7, 2005 Report Share Posted March 7, 2005 FABULOUS BEAN ENCHILADAS 2 C, sunflower seeds, soaked 1/2 C tahini 1/4 C lime (or lemon) juice 1/2 C sun dried tomato, soaked in a1 full cup of water (water goes in blender too) 1/2 - 1 T dried chili (your preference) 2 t ground cumin 2 t sea salt 1 t garlic (fresh) 1 t flax oil Blend until thick and creamy in blender. Cut nori sheets into 4 pieces. Roll in cut nori sheets (the brownish appearing sheets are raw, green are toasted). MACADAMIA NUT SOUR CREAM 1 C macadamia nuts 1/2 C water 1/8 C lemon juice 1/8 C olive oil 1 t golden flax seeds 1 t garlic 1 t sea salt 1 pinch of fresh onion. Blend until thick and creamy. MANGO KIWI HEMPNUT SALSA 'VIVA' 1 C kiwi, cubed 1 C roma tomato, diced 3/4 C mango, cubed 1/4 C onion, chopped 1/8 C lime juice 2 T hempnuts 2 t olive oil Mix in bowl and serve as side to enchiladas.
