Vidalia Onion Relish 1 1/2 gallons ground Vidalia Onions (about 20 lbs.) 1/2 cup sea salt 1 quart apple cider vinegar 1 teaspoon turmeric 4 teaspoons pickling spice (in piece of cheese cloth) 4 Tablespoons pimento, chopped (optional)4 1/2 cups raw sugarGrind enough Vidalia Onions to yield 1 1/2 gallons, add 1/4 cap salt and let stand 30 minutes, Squeeze juice from onion-salt mixture and discard juice. Tie pickling spice in cheese cloth. Combine onions, vinegar, sugar, turmeric, spice bag and pimento, in a large sauce pot. Bring to a boil and cook until thick, (approximately 30 minutes), stirring often. Remove and discard spice bag. Pack both onions and cooking liquid to cover in hot jars, leaving 1/2-inch head space. Remove air bubbles. Wipe jar rims. Adjust lids. Process 10 minutes in a boiling water bath. Sweet onion relish (vidalia or walla walla on Categories: Relishes Vegetables Yield: 1 Quart 4 c Onions, sweet; chopped 1 c Vinegar, white 1 tb Mustard Seeds 1/2 ts Ajawein Seed (Indian spice) or 1½ ts celery seed 1/2 ts Allspice, ground 1/4 ts Pepper flakes, red 1 ts Coriander, ground 1/2 c Sugar, Brown Mix together all ingredients. Pack into a 1 quart glass or plastic container. Refrigerate for 1 week before using.Nutrition per 1/4 cup calories 35 protein 0 grams fat 0 grams sodium 3 m_grams carbohydrate 8 grams cholesterol 0 m_grams fiber 0 gramsNotes and Credits To retain maximum crunch, this relish is not heat-sterilized, so it must be kept refrigerated.If you are looking for the sweetest onion, always select the flattest shape. The more rounded or globular it is, the hotter it generally is.Sometimes the tops of the onions almost seem to be slightly depressed in the center. They will have the thickest layers and the sweetest flavor. Red onion relish Categories: Relishes Yield: 2 Cups 3 lg Tomato 1 lg Bell pepper, green ½ lg Onion, red Cider vinegar Salt Pepper Peel and seed tomato and cut into 1/8-inch dice. Seed green pepper and cut into 1/8-inch dice. Cut onion into 1/8-inch dice. Combine tomato, pepper and onion in bowl. Add vinegar just to cover and salt and pepper to taste. Chill. (Can be prepared 1 day ahead.)A few hours before serving, drain well. Serve chilled or at room temperature.
