Here's a Gazpacho for you. Hope you enjoy! I can look further into my books

Chunky Gazpacho

2 cups chopped bell pepper, divided

1 1/4 cups chopped green onions, divided

2 large cucumbers, peeled, and chopped. divided

2 (16 oz)cans stewed tomatoes (I prefer diced)

1 1/4 cups vegetable broth

1 to 2 T red wine vinegar

1/2 to 1 t garlic powder

1 t ground celery seeds

1/2 cup bread crumbs

1 t sugar

2 to 3 drops Tabasco sauce

Pepper to taste

1 1/2 cups nonfat croutons.

Set aside 1 cup bell pepper, 1/2 cup green onions, and 1 cup cucumber: store in

plastic bag.

Combine remaining ingredients except croutons in blender and blend until smooth.

Pour gazpacho into bowl; cover and refrigerate until ready to serve.

When ready to serve, add reserved vegetables and top with croutons.

Per serving: Calories 117 * Fat .7g * Carbs 28g * Protein 4g * Cholesterol 0mg *

Sodium 541mg

Exchanges 1/2 starch * 4 vegetable

Dr. also makes a kid-e-reg.. the ingredients are Slippery

elm bark, licorice root, Fennel seed, Anise seed & Fig syrup with

vegetabl glycerine. I bought all the ingredients but have been

trying to fing a recipe I could go by to make this. I got dried

figs, I let them soak for 12 hours in water and boiling them now to

try to make the syrup, not sure if I'm doing that right or not? any

help would be appreciated..
