This sound divine! And yes, I was thinking the same thing about drying yellow tomatoes this summer because a lot of time a recipe tastes great and looks like poo.

Sun Dried Tomato, Fresh Herb and Garlic Dip

Put in the blender:

1/4 cup sun dried tomatoes

6 sprigs fresh parsley, stems and all

1 Tbsp. fresh oregano

1/2 Tbsp. fresh marjoram

1 Tbsp. fresh thyme

1 clove garlic

3 Tbsp. apple cider vinegar

6 Tbsp. water

Blend until it is the desired consistency, smooth or chunky. Great as a dressing for lettuce wraps. Use as a dip for veggie chips or as a raw spaghetti-type sauce.

I am going to dry some yellow tomatoes this summer to try in this recipe, because I don't care for the color of this mix, but I love the taste.

I wasn't going to say that exactly but....:>))))) If you leave it fairly chunky you see red tomato and green herbs
