In January 2008 I had a cleam CT scan in my lungs, where perhaps there were a few tiny undetectable nodules still hanging around, but for the most part everything looked stabled. The femara (anti-estrogen hormone) was still doing it's job. I had gotten off my raw foods diet. I was binging on cheese and Tillamook vanilla ice cream (can you believe this?). In order to get me off these addictive dairy products, I had come up with a formula that I thought would work for me: Do 5 days raw Monday - Friday, then on the week-ends 25% of my diet could be cooked. Dr. O. Young, from the Ph Miracle Diet (which Cousens copied and then modified), he recommended TOFU---and NOT fermented soy products. In fact, Young recommends never again to eat fermented foods. I was having a ball with my tofu. I was making vegi sandwiches on rye bread with meltable monterey jack soy cheese in my Foreman grill. I was making vegeterian pizzas with this yummy 100% whole-grain crust with, again the meltable soy cheese. I was having sprouted corn tortillas with, again the meltable soy cheese. I was even adding tofu to my smoothie in the morning on occasion. I was on my way to knocking off the 20 pounds I had gained. I was off the dairy binges. I had found a great 3-room studio in downtown Portland to start by Green Living Arts Institute. And it was time for my next CT scan, which was actually two months overdo. I knew it was going to be fine. B...u....t in the back of my mind.....just a bit of fear. In less then 9 months, I had a prior tumor (which had shrunk to nothing the year before and was stable) grow to a 3.5 x 1.9 cm. I contribute it, of course to the sugar in the dairy, but the soy as well. And to think that Young recommended non-fermented soy products, which I followed. I read a book by Jane Plant called " Your Life In Your Hands; Understanding, Preventing, and Overcoming Breast Cancer. " There was a lot in there that I liked, but then she would say something that would actually kind of offend me. She has overcome cancer a few times - you might want to read the book just to hear her story. But she claims that if you follow her diet to the letter, you will " cure " your cancer, and will not lose your hair during chemo. (This makes me wonder...) But anyway, her diet is chock full of tofu. I googled her to see if there was any information on how she is doing currently, but really didn't find much.
