Hi Jim,

Horseradish is awesome.

Go for fresh one, pickled ones are all vinegar. It can be eaten grated

in raw state in stead of mustard, but you better watch out and keep it

off your palate, otherwise it will clear your sinuses like a wire brush

and drive you to tears :-) Excellent when you have sniffles.

There are also a few recipes for sauces out there. One popular one is a

sauce from apples and horseradish, but I hate it. Sauces are quite mild,

because the horseradish looses its punch when cooked. I would

experiment, if I were you.

It is one of the richest sources of vitamin C, something like 5 times

what you get from oranges etc. per weight. I do not remember the

numbers, it has been a few decades when I came across this info, but the

ratio was impressive. If my memory does not fail me, 27 mg per 100 g.
