It can be eaten grated in raw state in stead of mustard, but you better watch out and keep it off your palate, otherwise it will clear your sinuses like a wire brush and drive you to tears :-) Excellent when you have sniffles. There are also a few recipes for sauces out there. One popular one is a sauce from apples and horseradish, but I hate it. Sauces are quite mild, because the horseradish looses its punch when cooked. I would experiment, if I were you. It is one of the richest sources of vitamin C, something like 5 times what you get from oranges etc. per weight. I do not remember the numbers, it has been a few decades when I came across this info, but the ratio was impressive. If my memory does not fail me, 27 mg per 100 g.
