Guest guest
Hello daniel, Yes, the sucrose is fermented into acetic acid (vinegar) and other fermentation products including small amounts of ethyl alcohol. One of the products, glucaric acid, helps with liver detox by preventing the recycling of toxins through the liver. This is probably why it has been reputed to have healthful benefits. When the culture is properly matured there is no sugar present.
