Proteins are denatured not only by cooking, but also by the hydrochloric acid in the stomach. In fact, both things, cooking and acid, allow pepsin to work on specific peptide bonds of the denatured protein. The partially digested polypeptides enter the small intestine where they are further broken down, often to amino acids, by trypsin. This step happens in the alkalinized environment set up by the sicarbonate from the pancreas. None of these things can happen until the protein is denatured. This " straightened form " referred to in the quote below is the denatured protein. Human digestive capabilities, not specialized for protein digestion as in carnivores, are greatly abetted by cooking the food prior to eating it. Cooking gives the system a head start on the denaturing aspect. Cooking of meat proteins helps digestion, not hinders it.
