Hello Mike,

Benzaldehyde smells like both cherry and almond. It is often used as

a natural cherry flavor. It is also a component of cherry laurel

oil. Still, it has a redolence of almond and could be used to make

an ersatz marzipan. It might be slicker to use almond butter with

cherry jam to disguise the cloyingly overpowering smell. I don't use

it straight anyway. It is the guest molecule in betacyclodextrin --

one of my favorite inclusion compounds. One would not notice the

benzaldehyde in a sandwich but for the numbing sensation on the

tongue, much like bitter almonds.

Thanks for this info Mike. I did switch the kids to almond butter years ago but

they still love peanut butter once in a while. I stopped in 1993 eating this.

Aflatoxin is ubiquitous in the environment, but the amounts

associated with almond are far, far less than the levels associated

with peanut. In fact cereal grains, in general, have more alflatoxin than do

almonds. You are pretty safe eating almond butter.
